American plum pie is a refined dessert with a rich history that combines the traditions of Russian and American cuisine. First, prepare the filling. Remove the pits from the plums, dividing them into two halves. Then cut each half into three wedges.
- Plums: 600 g

In a small mixing bowl, crack one egg and add sugar (70 g) and a pinch of salt. Whisk with a mixer or whisk until the sugar is completely dissolved and the mixture is fluffy and light.

Add vegetable oil (60 g) and mix until smooth. The liquid part of the dough is ready.

Move to the dry part of the dough. In a spacious bowl, mix sifted flour and baking powder. Add the liquid part of the dough to the bowl and knead. You will get a rather soft, non-sticky dough that needs to be divided into two unequal parts: 1/4 and 3/4. The smaller part will go on top, and the larger one will be for the base of the pie.
- Wheat flour: 230 g
- Baking powder: 1 piece

Roll out the dough for the base with extra for the edges. Carefully transfer the dough to the mold and place it there. Trim excess dough and add it to the reserved portion. Sprinkle the bottom with cornstarch and evenly distribute it across the pie base. Next, arrange the plums, trying to fit them all in as much as possible.
- Cornstarch: 1 tablespoon

Now it's time to decorate the top of the pie. Roll out the dough thinly and cut it into equal strips. First, lay half of the prepared strips in one direction, for example vertically, at equal distances from each other. And vice versa. Fold every other vertical strip to the middle of the pie, for example the 1st, 3rd, and 5th strips, place a horizontal strip over the 2nd and 4th strips, then return the folded vertical strips back in place.

To ensure the top browns and darkens well, it should be brushed with egg. Bake the pie in a preheated oven at 180 degrees for 40 minutes. The plum pie is ready.
