Cherimoya and Pisco Clary

Cleri is a refined combination of exotic fruit and aromatic alcoholic drink. This dessert originates from Peruvian traditions where pisco is widely used in cocktails and desserts. Orange cream adds softness to the flavor, while the decoration of strawberries and chantilly cream gives an elegant presentation.

To prepare cleric, wash it, peel the cherimoya and remove the seeds. Add sugar, pisco, wine, orange slices, and chopped mint leaves. Place in the refrigerator for 30 minutes.
- Cherimoya: 1 kg
- Pisco: 40 ml
- Muscat wine: 300 ml
- Powdered sugar: 40 g
- Mint: 10 pieces

To prepare orange cream, place the zest in cold water and blanch until boiling. Strain and cool.
- Orange zest: 1.5 piece

Pour orange juice into a pot and heat until the volume is reduced by half, constantly removing the foam. Cool down.
- Orange juice: 400 ml

Mix eggs, yolks, sugar, reduced orange juice, and powdered milk. Stir well and pour into a pot. Heat on low heat, stirring constantly until creamy consistency is achieved.
- Chicken egg: 2.5 pieces
- Egg yolk: 2 pieces
- Sugar: 220 g
- Orange juice: 400 ml
- Dry milk: 12 g

Add butter, soaked gelatin sheets, and orange zest. Chill and fold in whipped cream while continuously stirring.
- Unsalted butter: 85 g
- Gelatin in plates: 3 pieces
- Orange zest: 1.5 piece
- Whipped sweet cream: 100 ml

Place cherimoya cleric at the bottom of the glass, then use a pastry bag to layer orange cream on top. Arrange sliced strawberries beautifully and decorate with chantilly cream and fresh mint.
