Pour gelatin with 50 grams of cold milk.
- Milk: 250 ml

Pour the remaining milk and cream into a saucepan, add vanilla, and bring to a boil over medium heat.
- Milk: 250 ml
- Cream 33%: 200 ml
- Vanilla pod: 0.5 piece

Cover with a lid and let it steep for 15 minutes.

Remove the vanilla, add chia seeds, gelatin, and half of the honey, mix until smooth and let it sit for a few minutes.
- Chia seeds: 3 tablespoons
- Gelatin in plates: 10 g
- Honey: 6 tablespoons

Pour the cream mixture into serving dishes and refrigerate for 2 hours.

Blend the thawed strawberries into a puree and strain through a fine sieve to remove the seeds.
- Frozen strawberries: 300 g

In a small bowl, mix starch with 2 tablespoons of cold water.

Transfer the puree to a saucepan, add starch, bring to a boil and let it simmer for 2 minutes, stirring constantly.
- Cornstarch: 1.5 teaspoon

Remove from heat, let cool for 10 minutes. Add honey and lemon juice.
- Honey: 6 tablespoons
- Lemon juice: 2 teaspoons

Meanwhile, prepare the decoration. Rinse fresh strawberries and dry them with a paper towel. Place the berries in a bowl, grate the zest of 1/4 lemon and sprinkle it over the berries. Pour in rum and 5 ml of lemon juice. Gently mix the berries with a spoon and let them sit for 5 minutes.
- Strawberry: 100 g
- Lemon zest: to taste
- Rum: 10 ml
- Lemon juice: 2 teaspoons
