Poppy Seed Buns

Lush poppy seed buns are an ideal recipe from childhood. And this is a rare pastry, with the recipe of which it is better not to experiment and cook as is. Poppy is too bright an ingredient and does not get along with many. True, vanilla extract is also used here , but it is needed rather by the dough, to enhance its warm bread aroma. Poppy calmly tolerates the proximity of fragrant vanilla, which cannot be said about other spices.

For the dough starter, mix 250 ml of warm milk, 50 grams of sugar, yeast, and 150 grams of flour until smooth. Cover with plastic wrap and let it sit for 20 minutes.
- Milk: 500 ml
- Sugar: 350 g
- Fresh yeast: 50 g
- Wheat flour: 700 g

Melt 100 grams of butter.
- Butter: 200 g

Whisk 2 eggs into a fluffy foam.
- Chicken egg: 3 pieces

Add a pinch of salt to the eggs and, while continuing to whisk, gradually add 150 grams of sugar. Whisk until the sugar is completely dissolved.

Gradually add melted butter to the eggs, whisking at low speed to prevent the foam from collapsing.
- Butter: 200 g

Add vanilla extract, starter, and flour to the egg mixture and knead the dough with a hook attachment. The dough should form into a ball and not stick to your hands. Cover the dough with plastic wrap and place it in a warm place for 1.5 hours. It should double in size.
- Vanilla extract: 0.5 teaspoon
- Wheat flour: 700 g

After an hour and a half, knead the dough and let it rise for another 20-30 minutes.

For the filling, place poppy seeds in a saucepan, pour in milk, mix and put on the heat. Cook on low heat for 15 minutes.
- Poppy: 250 g
- Milk: 500 ml

Sift the poppy seeds and let all the liquid drain for 10 minutes.

Transfer the poppy seeds to a clean bowl, add 150 grams of sugar, and grind with a mortar or immersion blender.
- Sugar: 350 g

Knead the dough again and roll it out into a rectangular sheet 5–7 mm thick.

Evenly spread softened butter on the dough, then with poppy paste.

Roll the dough into a log and cut it into 5 cm wide pieces. Place them on a baking sheet lined with parchment.

Beat the egg with a spoon of water and brush this mixture on the buns. Place them in an oven preheated to 180 degrees for 20-25 minutes.
