Teplik Pie

This pie is baked in the Tver restaurant "Doma u Druzey", owned by Andrey and Darya Ivanov. Lots of berries, preferably seasonal, tart poppy seeds and airy powdered sugar. The recipe is taken from the book "Geography to Taste with Nika Ganich. Gastronomic Guides .

For the test, mix yeast, sugar, milk, salt and leave in a warm place for 10 minutes. Add the prepared yeast to the sifted flour, mix and let it sit for 15-20 minutes. Then add butter and let it sit for another 10-15 minutes.
- Dry yeast: 8 g
- Sugar: 284 g
- Milk: 375 ml
- Salt: 9 g
- Wheat flour: 500 g
- Butter: 70 g

Divide the prepared dough into about 20 pieces. Make balls and roll out circles with a diameter of 6-7 cm. Place the filling, pinch, and shape into round pies.

For the filling, separately fry frozen berries in sugar caramel. To make the caramel, melt about 2 tablespoons of sugar for each filling in a pan. At the end of frying, add starch.
- Frozen strawberries: 100 g
- Frozen blackcurrants: 100 g
- Frozen cherries: 100 g
- Sugar: 284 g
- Starch: 15 g

Place the prepared pastries on a buttered baking dish. Arrange them close, but not touching.

Traditionally, one pie is filled with honey for happiness and good luck.

Brush the pies with beaten egg, sprinkle with confectioner's poppy. Place in a warm place for 10-15 minutes to rise.

Bake in a preheated oven at 200 degrees for 15-20 minutes.

Sprinkle the finished pie with powdered sugar and decorate with fresh berries.
