Making cream. First, soak the gelatin (12 g).
- Gelatin: 15 g

Combine cream, milk, and sugar (90 g) in a saucepan and bring to a boil.
- Cream 35%: 375 ml
- Milk: 200 ml
- Sugar: 140 g

Remove from heat, add gelatin and blend with an immersion blender. Pour the panna cotta into glasses.

For orange jelly, soak the gelatin (3 g). Mix sugar (50 g) and starch in a separate bowl.

Heat the puree in a saucepan, add sugar and starch. Cook until semi-transparent.
