Ciabatta with Levito Madre Sourdough

To make this bread, you first need to prepare <a href="https://eda.ru/recepty/vypechka-deserty/zakvaska-dlya-hleba-levito-madre-138635">traditional Italian sourdough</a>.

Mix the starter, flour, and 350 ml of cold water. Cover with plastic wrap and place in a cool place for 40 minutes.
- Wheat sourdough: 200 g
- Wheat flour: 500 g
- Water: 450 ml

Add salt and a little cold water to the dough; continue kneading while gradually adding water. Occasionally let the dough rest in a cool place for 5-10 minutes. It will take about 30 minutes to knead. Properly kneaded dough should stretch well and not tear.
- Salt: 12 g
- Water: 450 ml

Add olive oil to the dough and mix it in. Then transfer the dough to a greased container, cover with plastic wrap, a lid, or a damp towel, and let it rest for 30 minutes.
- Olive oil: 20 ml

After 30 minutes, the dough needs to be folded. To do this, take one edge of the dough, lift it up, and then connect it to the opposite edge. Turn the container with the dough 90 degrees, lift and fold again, turn another 90 degrees to fold again, and finally turn and fold the fourth side of the dough. Cover and let it rest for another 30 minutes.

Thus, fold the dough every 30 minutes for 4 hours. It will gradually increase in volume and swell, making the last folds more difficult.

Generously dust the table with flour and carefully place the dough on it. Slightly stretch the dough on the table to form a rectangle. Dust it with flour, cut it into three equal parts, and dust the cut areas with flour.

Lay a linen kitchen towel on the baking tray. Dust it well with flour and do the same for the towel. Carefully place the future ciabattas on the towel, separating them with its folds. Cover with a second towel, which can also be dusted with flour to prevent sticking. Let the dough rest for another hour.

While the dough is rising, prepare the oven. Place an inverted baking tray in the middle of the oven. Put a heatproof container with water at the bottom of the oven (this will provide steam), and preheat the oven to its maximum temperature.

Place the ciabatta on baking paper or a silicone mat and send it to the preheated oven. Bake for 7 minutes.

After 7 minutes, take the container with water out of the oven and lower the temperature to 220 degrees. Bake for another 10-15 minutes. Transfer the finished ciabattas to a rack and let them cool completely.
