Melt the chocolate in a water bath.
- Dark chocolate: 125 g

Mix cream, sugar, honey and bring to a boil. Add chocolate and stir well. Simmer the mixture on low heat for about 12 minutes.
- Cream 35%: 150 ml
- Sugar: 200 g
- Honey: 120 g

Line the mold with parchment, pour in the mixture, and let it cool first at room temperature, then place it in the refrigerator.

When the toffees harden, cut them into pieces. Store in the refrigerator.
