Pumpkin and Cheese Galette

Whole grain galettes always fill the house with a special aroma of autumn baking.

Mix 2 types of flour in a bowl and set aside. In a separate bowl, pour water and vegetable oil, add salt, gradually incorporate the flour mixture while kneading the dough. The finished dough should resemble soft clay. Wrap the dough in plastic wrap and let it rest for 15-20 minutes.
- Whole grain flour: 0.5 glass
- Premium wheat flour: 0.5 glass
- Vegetable oil: 4 tablespoons
- Water: 4 tablespoons
- Salt: 0.5 teaspoon

First, prepare the filling. Cut the pumpkin into thin slices. Melt butter in a pan, add sugar, pumpkin, and a clove of garlic, and caramelize until golden brown. Remove the garlic and let the filling cool.
- Pumpkin: 150 g
- Butter: 1 tablespoon
- Brown sugar: 1 tablespoon
- Garlic: 1 clove

Roll out the dough on parchment, add the filling, generously sprinkle with cheese, and carefully fold the edges.
- Cheese: 80 g

Sprinkle the galette with sesame seeds and bake in the oven at 180 degrees for 10-15 minutes. Decorate with cheese, pumpkin seeds, and basil leaves. Serve the galette hot.
