Golden tsimmes is a traditional Jewish dish that combines the sweetness of fruits and caramelized sugar with the tender texture of carrots. Slice the carrot into thin rounds and fry in fat over low heat until partially cooked.
- Carrot: 800 g
- Fat: 3 tablespoons

In a thick-bottomed saucepan, burn sugar to brown caramel.
- Sugar: 6 tablespoons

Add a glass of water, burnt sugar, honey, raisins, prunes, and cinnamon to the pot and simmer on low heat for 1.5–2 hours, adding a little water if necessary.
- Sugar: 6 tablespoons
- Honey: 3 tablespoons
- Raisin: 0.5 glass
- Prunes: 130 g
- Cinnamon: 0.5 teaspoon

At the end, remove the lid, add lemon juice, and simmer on low heat for another 15-20 minutes.
