Cookies on pickle juice

A good and simple recipe for shortbread cookies for when you want some sweet pastry, but there are no eggs or milk in the fridge. And this is also a great way to find a use for pickle juice. If desired, you can complicate the recipe with chocolate chips, candied fruits, any other additives, or add nothing - then such cookies can be eaten even during Lent.

Mix all the ingredients in a large bowl.
- Cucumber pickle: 1 glass
- Vegetable oil: 240 ml
- Sugar: 300 g
- Baking powder: 2 tablespoons
- Wheat flour: 800 g

Knead the dough until smooth. It should be dense and sticky, not sticking to your hands.

Let the test rest for 30 minutes.

Preheat the oven to 180 degrees.

Roll the dough to a thickness of 0.5 cm. Cut out cookies, transfer to a baking sheet, and bake for about 20 minutes. They should only be slightly browned.

Repeat this several times until all the dough is finished.
