Kharsha or kharcha are Moroccan pancakes made from semola flour, which are somewhat reminiscent of English muffins. A good option for breakfast: textured pancakes are served with jam, cheese or honey. In Russia, semola is a rather rare and expensive cereal, so it can be replaced with regular semolina, it is slightly different from semola, you can read more about their differences <a href="https://eda.ru/media/vopros/chem-otlichaetsya-manka-ot-semoly-i-semoliny">here</a>.

Melt the butter in a saucepan over low heat.
- Butter: 125 g

Mix semolina and sugar.
- Semolina: 310 g
- Sugar: 50 g

Add salt and baking powder.
- Salt: pinch
- Baking powder: 10 g

Add melted butter and mix.

Pour in the milk and stir for a minute. Let it sit for 15 minutes for the semolina to absorb the milk and butter.

Sprinkle the work surface with semolina and lay out the dough, spreading it with your hands to a thickness of 1-1.5 cm.

Cut round pancakes using a culinary ring or a round cookie cutter.

Heat a non-stick pan without oil and fry the kharshi on one side for 3-4 minutes over medium heat.
