Gumbo Thick Soup

80 minutes
This is a thick, spiced soup similar in consistency to a stew, common in the state of Louisiana. A very convenient recipe, since any leftover meat, especially smoked, will do for this dish.

1
Chop the onion, pepper, and celery. In a large pot, melt butter over medium heat. Sauté the onion, pepper, and celery until soft. Then add minced garlic, seasoning with salt and pepper.
- Butter: 6 tablespoons
- Onion: 2 heads
- Green pepper: 2 pieces
- Celery greens: 1 stem
- Ground dried garlic: 1 teaspoon
- Salt: to taste
- Ground black pepper: to taste
2
Increase the heat, pour in 1 cup of water, add meat (leftover meat is suitable for making soup; you may have leftover grilled meat with barbecue sauce).
- Beef: 2 kg

Then add crushed canned tomatoes and chicken broth. Bring to a boil, reduce heat, and simmer for about 30 minutes until the meat is tender. Add okra, red pepper, Worcestershire sauce, and 1 tablespoon of hot sauce (more if you like it spicy).
- Canned tomatoes: 2 jars
- Chicken broth: 3 glasss
- Okra: 250 g
- Red pepper flakes: 2 teaspoons
- Worcestershire sauce: 3 tablespoons
- Frank's Hot Sauce: 1 tablespoon
