Uzbek lagman is not just a dish but a true symphony of flavors and traditions. Its history traces back to Central Asia, where it became part of culinary heritage. This hearty and aromatic dish combines soft homemade noodles with a rich broth infused with spices and vegetables. Beef stewed with onions, carrots, potatoes, and bell peppers adds depth to the soup's flavor. A slight spiciness from chili peppers and khmeli-suneli makes it even more expressive. Lagman not only satisfies hunger but also warms the soul. It is enjoyed hot, relishing the softness of the noodles, the sharpness of the spices, and the freshness of herbs. For the noodles, mix the ingredients. Knead thoroughly until pliable. Add flour if necessary (the dough should be firm but not dry). Let it rest for 30-40 minutes.
- Wheat flour: 90 g

Meanwhile, prepare all the vegetables: dice, chop, or shred them.

Slightly fry the meat (I have ready pieces for goulash), then add the vegetables in order: first onion, then carrot and pepper, then potato, and finally - tomato. Cook for about 5 minutes.

Then pour in warm broth, the level should be slightly above the vegetables, reduce the heat and simmer for about 30 minutes, adding spices. At the end, add minced garlic and herbs. Salt and pepper to taste.

Meanwhile, roll out the dough, fold it into several layers, and cut the noodles. You can use store-bought, but fresh, homemade noodles are perceived completely differently in this dish! Lay the noodles out to dry. Then boil in salted water. I make my usual egg noodles.
