Homshurbo is a traditional Tajik soup that combines tender meat, aromatic spices, and nutritious vegetables. It originates from the mountainous regions of Tajikistan where simple yet hearty dishes are highly valued. The rich broth is made from beef and infused with the flavors of bay leaves and fragrant onions. Chickpeas add a delicate texture to the soup while fresh vegetables like carrots, potatoes, bell peppers, and tomatoes give it brightness and freshness. Soak chickpeas in cold water overnight.
- Chickpeas: 200 g

Wash the meat, cut it into large pieces, place it in a pot, cover with cold water, and put it on the fire. When the broth boils, remove the foam, reduce the heat to medium, add peeled onion heads, bay leaf, and cook the meat until done (about 1.5–2 hours). After the time is up, remove the onion (it has done its job — imparted its aroma and absorbed all harmful substances in the meat). Strain the broth through a double layer of cheesecloth to give the soup a nice color. At this stage, you can lightly salt the soup.
- Beef: 700 g
- Onion: 2 heads
- Bay leaf: 3 pieces
- Salt: to taste

Drain the water from the peas. Clean and wash the carrot, potato, and pepper. Cut into large pieces. First, add the peas and carrot to the soup and let it cook for 10 minutes, then add the sweet pepper, and after 5 minutes, add the potato.

Cook the soup until all the vegetables are ready. At the end of cooking, add the chopped tomatoes.
- Tomatoes: 3 pieces

First, place the vegetables, meat, and a little peas on the plate, then add the broth. Serve hot with chopped fresh herbs.
