We rinse the peas in cold water and soak them overnight.

In the morning, we fill the ribs with cold water and boil them gently until the meat separates from the bones.

Simultaneously, we cook the peas over medium heat, stirring constantly.

We clean and dice the potatoes. Then we set them aside.

Remove the ribs from the prepared broth, separate the meat, and strain the broth. Return the broth to the heat. By this time, the peas have been cooking for 2 hours.

Drain the excess water from the peas, transfer the peas to the broth, and cook for another hour. Add salt as needed.
