Tomato soup with honey and ginger is an amazing combination of sweetness, spiciness, and rich tomato freshness from Czech cuisine. This soup fills the home with a cozy aroma of spices and warms the soul. Historically, in the Czech Republic, tomato soups are made with fresh herbs and spices, but this recipe offers an unexpected twist—honey that softens the taste and ginger that adds a sharp spiciness. Olive oil enhances the depth of aroma while red onion and garlic add richness. Served hot, it pairs perfectly with crispy toasts or rye bread.

We take the tomatoes out of the jar and peel them, adding their own juice. We blend the mixture, but not to a uniform mass, leaving small pieces.
- Tomatoes in their own juice: 200 g
- Tomatoes: 1 piece
- Tomato juice: 100 ml

In a saucepan, sauté diced onions in olive oil until golden brown, then add minced garlic and almost immediately add crushed tomatoes in juice. Bring the soup to a boil and reduce the heat to prevent it from boiling.
- Olive oil: 20 ml
- Red onion: 30 g
- Garlic: 1 piece
- Tomatoes in their own juice: 200 g

After that, we add everything else: finely chopped hot pepper, bay leaf, salt and pepper to taste, dried basil, seedless tomato cubes, and finally — thin strips of ginger root and honey. We mix the soup and let it sit for a few minutes for the spices to release their aroma, then pour it into a bowl and it can be served.

- Bay leaf: 2 pieces
- Salt: to taste
- Ground black pepper: to taste
- Dried basil: to taste
