Melt the butter, sauté the flour in it, stirring constantly, until a homogeneous mass forms. Heat the broth, pour in the prepared mixture. Stir and keep on low heat for about 10 minutes.
- Butter: 50 g
- Wheat flour: 60 g
- Meat broth: 1 l

If lumps form, strain the mixture through a sieve. Add mustard, mix, and simmer on low heat for a few minutes. Pour in the cream and remove from heat.
- Mustard: 3 tablespoons
- Cream: 200 ml

Before serving, place the fried bacon on the plates. Garnish the soup with chopped onion or crushed red pepper. Serve with hot baguette.
