When the water boils, reduce the heat to low, add salt to taste, add an unpeeled washed onion, and cover with a lid. After 30 minutes, remove the onion, add diced carrots. After 5 minutes, add peeled and diced potatoes, and check for salt. Cook for another 10-15 minutes.
