Place the washed chicken legs in a pot, cover with cold water, and set on high heat. When the water boils, reduce the heat to low, add salt to taste, add an unpeeled washed onion, and cover with a lid. After 30 minutes, remove the onion, add diced carrots. After 5 minutes, add peeled and diced potatoes, and check for salt. Cook for another 10-15 minutes.

Then add the vermicelli and cook for 15 minutes. After that, add the spices (a pinch of tarragon, fragrant and white pepper, a little black pepper). Turn off after 5 minutes. Let the soup steep for 10 minutes. You can add half a boiled egg and finely chopped herbs to the bowl with the soup.
