Pies with chicken and mushrooms

Chicken and mushroom pies are a fragrant and hearty treat from Russian cuisine. The golden crispy crust of puff pastry hides a tender filling of juicy chicken fillet, mushrooms, and savory onion, combined with the softness of mayonnaise. Preheat the oven to 220 degrees. Roll out the dough and cut it into 4 squares of 18 cm each. Cover and set aside. Mix the minced meat, mushrooms, onion, and mayonnaise. Season with salt and pepper to taste.
- Chicken fillet: 225 g
- Champignons: 200 g
- Onion: 1 head
- Mayonnaise: 3 tablespoons

Place the filling on squares of dough, leaving a 2.5 cm border. Brush the edges of the dough with egg, fold the squares diagonally to form triangles. Transfer the pastries to a greased baking sheet. Prick them on top with a fork for steam to escape. Brush with the remaining egg.
- Puff pastry: 500 g
- Chicken egg: 1 piece

Bake for 15 minutes. Reduce the oven temperature to 200 degrees and bake for another 15 minutes until golden brown.
