Preheat the oven to 200 degrees. Place the baguette pieces on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper and bake for 10-12 minutes until golden. Remove from the oven and drizzle with olive oil again. Cool and spread with cheese.
