For tzatziki sauce, peel half a cucumber, remove the seeds, and chop it very finely. Blend with yogurt, fresh lemon juice, crushed garlic, salt (a quarter teaspoon), and black pepper (a quarter teaspoon). Whip for 1 minute, then add chopped mint and refrigerate until serving.

Prepare vegetables for the salad: chop fresh mint leaves, cut cherry tomatoes in half, slice 0.5 peeled cucumber lengthwise, then into slices, tear lettuce leaves into pieces, and cut olives in half lengthwise. Mix everything with fresh lemon juice and 2 tablespoons of olive oil.

Sprinkle the lamb with salt and pepper to taste, fry in a pan with oil, and send to the oven to bake until done (15-20 minutes). Let the cooked lamb cool (15 minutes) and slice it thinly against the grain.
