A rich sauce made from milk, butter, and flour transforms ordinary slices of bread into a true delicacy. The addition of eggs makes the filling even more tender and velvety. Pour the milk into a saucepan, add butter, season with salt and pepper, and bring to a boil. Add flour, stirring constantly with a wooden spatula, and cook on low heat until the sauce thickens and pulls away from the sides of the pan. Remove the saucepan from the heat and let the sauce cool. When it is at a temperature that does not burn your hands, mix in the eggs one at a time, stirring well before adding the next. Then add the grated cheese. Spread the mixture over slices of bread and leave them in a cool place for 30 minutes.
- Milk: 275 ml
- Butter: 75 g
- Salt: to taste
- Ground black pepper: to taste
- Wheat flour: 3 tablespoons
- Chicken egg: 3 pieces
- Gruyere cheese: 150 g
- Toasts: 12 pieces

Heat vegetable oil in a large skillet to 180 degrees, carefully place 3-4 toasts in the skillet, filling side down, and cook for a few minutes until golden. Remove the toasts with a wide spatula and place them on a warmed plate to keep them from cooling while frying the rest. Serve immediately.
