Boil the chicken breast. Boil a small beet and peel it.
- Chicken breast: 150 g
- Beet: 1 piece

Tear arugula into a salad bowl (a couple of good handfuls, don't be stingy).
- Arugula: 2 bunchs

Cut the breast into cubes; grate the beetroot coarsely; chop the onion proportionally; halve the olives (if large, cut into four pieces). Put everything in a bowl.
