In a large bowl, mix tomatoes, apricots, 1/2 portion of mint, add salt and pepper.
- Tomatoes: 450 g
- Apricots: 3 pieces
- Crushed mint leaves: 2 tablespoons
- Salt: to taste
- Ground black pepper: to taste
