Preheat the oven to 180˚C. Place a silicone mat on the baking sheet and divide 120 g of grated Parmesan into 8 mounds. (You can use parchment paper instead of a silicone mat, greased with oil.)
- Grated Parmesan cheese: 180 g

Press the cheese with your hands to flatten the lumps. Bake for 6-8 minutes until the cheese melts and browns. Move the baking sheet to a cool place and let it cool; break the cheese crisps into large pieces.

Heat honey in a small pan over medium heat. In a large bowl, mix honey, shallots, oil, vinegar, and mustard; season with salt and pepper.
- Honey: 2 tablespoons
- Shallots: 0.5 head
- Olive oil: 0.4 glass
- Wine vinegar: 3 tablespoons
- Dijon mustard: 1 teaspoon
- Salt: to taste
- Ground black pepper: to taste

Add radicchio, arugula, apple, and the remaining grated cheese; mix well. Season with salt and pepper to taste. Serve the salad garnished with prepared crispy cheese.
