Spinach salad with parmesan is the embodiment of elegance in Italian cuisine. Its history is rooted in traditional Mediterranean dishes where freshness and simplicity play a key role. Spinach adds tenderness to the dish, sun-dried tomatoes provide flavor richness, and cucumbers add refreshing crunchiness. Pine nuts contribute a warm nutty note, while thin shavings of parmesan add zest. Balsamic vinegar and olive oil highlight the balance of flavors, making the salad both refined and rich. This dish is perfect as a light dinner or an exquisite appetizer accompanying a glass of white wine. It can be enjoyed as a standalone dish or as a side to meat and fish. The lightness, juiciness, and harmony of ingredients make this salad truly unforgettable.

1
In a deep dish, we place chopped pieces of sun-dried tomatoes. We drizzle the tomatoes with balsamic and olive oil, adding salt and pepper to taste.
- Sun-dried tomatoes: 4 pieces
- Balsamic vinegar: 3 tablespoons
- Olive oil: 3 ml
- Sea salt: to taste
- Ground black pepper: to taste

Next, tear the spinach leaves by hand and mix them with the contents. Make cuts on the cucumbers with a fork — this way they will absorb the juice better. Cut into large pieces and transfer to a bowl.
- Fresh spinach leaves: 1 bunch
- Cucumbers: 2 pieces

Next, we sprinkle with the juice of half a lemon, add toasted nuts and parmesan.
- Lemon: 1 piece
- Pine nuts: 20 g
- Parmesan cheese: 50 g
