Finely chop the chili pepper.

Mix all the sauce ingredients in a deep bowl: chopped chili pepper, tomato paste, wine vinegar, ginger, paprika, ground pepper, dried garlic, Tabasco (can be replaced with any other hot sauce).

Put the wings in the sauce and mix thoroughly again. Let marinate for 1 hour.

After an hour, place the wings on a baking sheet and bake at 200 degrees for 30 minutes. Then increase the temperature to maximum and wait until the wings start to burn, then turn off (5-10 minutes).
