Choose 2 thick pieces of veal (2-4 cm).

Make sure the meat is at room temperature and place it on a hot grill pan lightly greased with vegetable oil.

While the steaks are 'resting', prepare the asparagus. Wrap the stems tightly in a damp paper towel and microwave for 3-4 minutes. This method steams the asparagus, making it tender and crisp.
