Zucchini cake with minced meat is an exquisite example of Russian culinary ingenuity, turning simple ingredients into a true gastronomic delight. Tender zucchini layers soaked in a fragrant mayonnaise and garlic sauce combine with juicy minced meat to create a harmonious flavor. Layers of fresh tomatoes and melted cheese add an appetizing texture and zest to the dish. This cake can be served hot or cold, but it is especially good straight from the oven when the cheese is slightly browned and the aroma of fresh herbs fills the kitchen. Traditionally, this dish is prepared in the summer season when zucchinis are freshest, but its versatility allows for enjoyment year-round. A magnificent choice for a festive table or a cozy family dinner!

Fry the onion, add the minced meat (I prefer a mix of pork and beef, chicken makes it even softer). 10 minutes will be enough, set aside to cool.
- Onion: 1 piece
- Ground meat: 0.4 kg

Preparing zucchini: clean them, remove large seeds, and grate on a coarse grater. After about 5 minutes, squeeze out the excess juice. Add eggs, salt, pepper, and flour; mix until homogeneous. Bake in a pan on both sides until golden brown (about 3 minutes on each side). You will get 5-6 patties depending on the diameter of the pan.
- Zucchini: 1.5 kg
- Chicken egg: 3 pieces
- Salt: 1 teaspoon
- Ground black pepper: 0.5 teaspoon
- Wheat flour: 7 tablespoons

In separate bowls, mix mayonnaise with minced garlic and diced tomatoes with half of the grated cheese. Place the first layer on a fireproof plate, spreading it with garlic mayonnaise. Top with minced meat. Repeat the actions, and on the 3rd layer, instead of minced meat, add tomatoes with cheese. Then, another layer with minced meat. Spread the top layer with mayonnaise, sprinkle with chopped parsley, and finish the masterpiece with the second half of the grated cheese. Place in the oven at 150 degrees until the cheese is golden.
