Lamb with quinoa

Lamb with quinoa is an exquisite dish of European cuisine where juicy meat harmonizes with the tenderness of quinoa and a rich raspberry sauce. Historically, such recipes arose from the desire to combine traditional meat dishes with light sides that enhance the main ingredient's flavor. Marinated lamb, baked to tenderness, acquires a wonderful aroma thanks to soy sauce, garlic, and cilantro. Quinoa cooked to fluffiness serves as a perfect complement with its light nutty undertone. The raspberry sauce combines sweet and tart notes, making the dish's flavor rich and memorable. This dish is suitable for both a cozy home dinner and a festive table as it combines ease of preparation with restaurant-quality presentation.

1
If you don't have time to wait for the lamb to marinate (it needs to marinate for half an hour to an hour), you can make everything much simpler)
2
In a bowl, mix 2 tbsp of soy sauce, 2 tbsp of olive oil, minced garlic and cilantro, and add pepper mix to taste. Stir everything well.
- Soy sauce: 3 tablespoons
- Olive oil: 2 tablespoons
- Garlic: 2 heads
- Fresh cilantro (coriander): 1 bunch
- Ground pepper mix: to taste
3
We place the meat in a baking bag, pour the marinade over it, and put it in a preheated oven (to 200 degrees) for 1 hour.
- Mutton: 400 g
- Soy sauce: 3 tablespoons
- Olive oil: 2 tablespoons
- Garlic: 2 heads
- Fresh cilantro (coriander): 1 bunch
- Ground pepper mix: to taste

While the meat is cooking, we prepare quinoa according to the package instructions: first rinsing it, adding water, bringing it to a boil, and then simmering for 15 minutes. (We will use quinoa as a side dish).
- Quinoa: 1 glass
- Water: 50 ml
5
We start preparing the sauce for the meat.
6
In a small saucepan, mix our raspberry jam, 1 tbsp of sugar, 1 tbsp of soy sauce, 1 tsp of balsamic vinegar, and add a pepper mix to taste. Bring it to a boil, then cook for about 2 minutes and remove from heat.
- Raspberry jam: 100 g
- Sugar: 1 tablespoon
- Soy sauce: 3 tablespoons
- Balsamic vinegar: 1 teaspoon
- Ground pepper mix: to taste

When our meat is ready, we take it out of the oven, cut it into small pieces, place it on a plate with quinoa, and drizzle with raspberry sauce. Enjoy your meal!!!?
