Preheat the oven to 100 degrees. In a bowl, mix flour, salt, and pepper. Cut the chicken into 8 pieces and remove the backbone. Dredge the chicken pieces in flour.

In a large cast iron or non-stick skillet, heat oil over high heat to 150°C. Carefully place chicken pieces skin-side down in the hot oil and fry until browned, about 1-2 minutes.

Using tongs, flip the chicken and lightly brown the other side. Flip again so it's skin-side down and cover the pan with a lid. Cook covered for 2 minutes. Remove the lid and continue frying the chicken, flipping as needed, until pieces are browned on both sides, about another 5 minutes. Transfer the chicken to a baking sheet. Lightly salt it. Place in the oven.

Pour the fat into a heatproof container and return the pan to the burner. Reduce the heat, add butter, and melt it. Add 2 tablespoons of flour and mix until a paste forms. Add milk and cook for about 3 minutes. Season with salt and pepper to taste.
