In a mortar, grind the bay leaf and chili pepper. Add sage, mustard, and nutmeg.
- Bay leaf: 1 piece
- Chili pepper flakes: 1 teaspoon
- Crushed sage leaves: 1 tablespoon
- Dry mustard: 1 teaspoon

Mix the spices with the minced meat, add salt and pepper. Mix the minced meat by hand.
- Minced pork: 500 g
- Salt: 1 teaspoon
- Ground black pepper: 2 teaspoons

Form 6 patties. Make a small indentation in the center of each patty (to keep them flat while frying). Place the patties in the refrigerator for 1 hour.

Heat the oil in a pan over high heat. Fry the patties on both sides and place them on a plate lined with paper towels to absorb excess oil.
