Preheat the oven to 200 degrees Celsius or prepare the grill. In a large bowl, mix tomatoes, two tablespoons of olive oil, vinegar, chili, oregano, a few cloves of garlic, salt, and pepper. Let it sit at room temperature for 20-30 minutes.
- Cherry tomatoes: 400 g
- Olive oil: 1 glass
- White wine vinegar: 2 tablespoons
- Chili pepper: 1 tablespoon
- Dried oregano: 1 teaspoon
- Garlic: 4 cloves

Meanwhile, make 3-4 diagonal cuts to the bones on each side of the fish with a sharp knife. Sprinkle salt and pepper inside the fish. Then stuff the fish with leftover garlic, lemon slices, and cumin sprigs. Brush the fish with the remaining two tablespoons of oil and sprinkle with salt and pepper.

Place the fish in a frying pan and cook for 20 minutes (cooking time depends on the size of the fish). If grilling, cook for 5-8 minutes until the fish is firm. Flip and cook for another 5-8 minutes on the other side. The fish is done when it has a crispy crust and a thin knife easily goes through it.

Taste the tomato mixture and season if needed. If necessary, add more olive oil. Serve the fish sprinkled with the tomato mixture along with the liquid.
