Greek fish with marinated tomatoes

4 servings

45 minutes

Greek-style fish with marinated tomatoes is a vibrant dish of Mediterranean cuisine, where the freshness of seafood combines with the aroma of spices and the rich flavor of tomatoes. Greeks have long prepared fish, complementing it with sweet-and-sour sauces and herbs to create dishes with a characteristic balance of flavors. Tender cod infused with lemon, garlic, and cumin acquires a slight spiciness from marinated cherry tomatoes with wine vinegar and chili. Baked or grilled, the fish is covered with a crispy crust while juicy tomatoes add freshness and lightness. This dish is perfect for a summer outdoor dinner, enhancing the atmosphere of sea breeze. Serve it with light sides or fresh bread to enjoy all the nuances of Greek gastronomy.

Meanwhile, make 3-4 diagonal cuts to the bones on each side of the fish with a sharp knife. Sprinkle salt and pepper inside the fish. Then stuff the fish with leftover garlic, lemon slices, and cumin sprigs. Brush the fish with the remaining two tablespoons of oil and sprinkle with salt and pepper.

    2. Ground black pepper to taste

Place the fish in a frying pan and cook for 20 minutes (cooking time depends on the size of the fish). If grilling, cook for 5-8 minutes until the fish is firm. Flip and cook for another 5-8 minutes on the other side. The fish is done when it has a crispy crust and a thin knife easily goes through it.
