Preheat the oven to 220˚C. Place the potatoes in a pot and cover with salted water. The water level should be 2.5 cm above the potatoes. Bring to a boil over high heat, then reduce to medium and cook the potatoes until tender for about 10 minutes.
- Potato: 1.2 kg

Drain the water, spread the potatoes on a baking sheet. Gently press each potato with your palm. Transfer the potatoes to a baking dish, drizzle with olive oil, and season with salt and pepper. Bake for about 45 minutes, turning once, until crispy.
