Finely chop the garlic, celery, and onion. Peel the tomatoes and cut them in half. Lightly toast the bread pieces and break them into small chunks. Place a pan over heat, add 4 tbsp of oil and sauté the garlic, celery, and onion until soft. Add the tomato halves, sugar, bay leaf, and oregano. Bring to a boil, reduce heat and simmer for about 45 minutes until the tomatoes are soft. Add the bread and lemon juice; season with salt and pepper. Cook while stirring until the bread is soft; then add 2 tbsp of oil and parsley. Remove from heat and keep warm.
