Rice with minced meat and barberry is a simple yet surprisingly aromatic dish where juicy meat, tender rice, and tangy barberry create a harmonious flavor. The origins of this combination can be found in Eastern and Central Asian cuisines, where barberry is often used to add a piquant sourness to dishes. In this recipe, the minced meat is first sautéed to reveal its rich texture, then combined with onions and spices, and finally the tender steamed rice absorbs the juices and aromas, creating a balanced dish. Barberry adds an unexpected touch of freshness. This dish is perfect for a casual dinner or lunch, especially when you want something nutritious yet light. It can be served as a standalone dish or complemented with herbs and vegetables to enhance the flavor.

1
Heat the pan and add the minced meat without oil. I prefer a mix of beef and pork as it's less fatty. Stir constantly until the meat releases its juices. Season with salt and pepper, cover with a lid, and cook on medium heat.
- Minced meat: 300 g
- Salt: 0.5 teaspoon
- Freshly ground black pepper: to taste
2
We rinse the rice and put it to boil. I turn up the heat so that the rice and filling are ready at the same time.
- Long grain parboiled rice: 0.5 glass
3
Meanwhile, we clean the onion, chop it finely, add it to the minced meat, mix it, add barberry, mix again and cover with a lid.
- Dried barberry: 7 g

When the rice is ready, we put it in the pan with the meat. We mix everything, cover it with a lid, cook together for another two minutes, and serve. Enjoy your meal!
