Neapolitan pork stew is the quintessence of Southern Italian cuisine, rich in the aromas and flavors of the Mediterranean region. Its roots trace back to Naples traditions where meat stews were cooked for hours, transforming tough pieces of meat into tender, juicy delights. A thick tomato sauce infused with spices, wines, and parmesan notes perfectly saturates the meat, creating a rich, velvety taste. Place a deep pan on the fire. Pour in 2 tablespoons of olive oil. Season the ribs with salt and pepper. Put them in the pan and fry on both sides. Place on a plate and set aside. Do the same with the beef.
- Olive oil: 0.5 glass
- Pork ribs: 1.3 kg
- Beef: 1 kg

In the same skillet, add the chopped onion and sauté until golden brown. Add the minced garlic and continue to sauté for about 3 minutes. Add the dry pepper and oregano, and cook for another 30 seconds while stirring. Pour in the wine and cook until it evaporates, about 5 minutes. Add the tomatoes, parmesan rind, and 3/4 of the basil. Return the ribs and beef to the skillet and cook on low heat.
- Onion: 1 head
- Garlic: 8 cloves
- Chili pepper: 0.5 teaspoon
- Dried oregano: 100 g
- Red dry wine: 2 glasss
- Canned tomatoes: 2 jars
- Parmesan cheese (rinds): 1 piece
- Basil leaves: 1 bunch

Cover the pan and place it in a preheated oven at 150 degrees. Cook for about 3 hours until the meat easily comes off the bones. Add the sausages and cook for another 30 minutes.
- Sausages: 450 g

Remove the pan from the oven, take out the ribs, beef, and sausages and let them cool. Then chop the meat and return it to the sauce. Remove the basil sprouts from the sauce. Add the remaining olive oil, salt, and pepper.

Prepare the pasta. Do not drain all the water, leave 1 cup. Add the pasta to the pan with meat and sauce. Mix well. Sprinkle with grated cheese and basil. Serve hot. Enjoy your meal!
