Chop the shallots in a food processor. Place in a bowl. Chop the mushrooms. In a medium skillet, heat 3 tablespoons of butter. Sauté the shallots for about 3 minutes, then add the chopped mushrooms. The liquid should evaporate. Continue to sauté the mushrooms with the shallots, stirring. Add oregano, salt, and pepper. Set aside the cooked mushrooms.
- Shallots: 3 pieces
- Champignons: 500 g
- Butter: 4.5 tablespoons
- Oregano: 1 tablespoon

In a small saucepan, melt the remaining 1.5 tablespoons of butter over medium heat, add flour and stir. Cook the flour for about a minute. Pour in the milk and stir constantly to avoid lumps. Bring to a boil over medium heat, but the sauce should not bubble! When the sauce thickens, add cheese. Keep stirring, and when the cheese melts, remove from heat. Season with salt and pepper to taste.

Salt and pepper the cutlets. Fry in a pan or on a grill. Place on a plate.
