Need 2 pieces of veal on the bone (with 4 ribs each) and 2 large sheets of thick parchment.
- Veal on the bone: 2 pieces

Mix pepper, salt, and garlic powder in a small bowl. Rub the ribs with the mixture.
- Ground black pepper: 0.3 glass
- Salt: to taste
- Garlic pepper: 1 tablespoon

Preheat the grill to 110 degrees. Place the meat on the grill, bone side down. The meat should reach an internal temperature of 75 degrees.

Then wrap each piece in parchment and return to the grill. Continue cooking until the internal temperature reaches 85 degrees. The meat should be tender enough to pierce with a knife. Total time is 7 hours.
