Provencal chicken nuggets are an exquisite version of classic nuggets inspired by southern France. They combine tender chicken fillet infused with the aroma of garlic and mayonnaise, with a crispy golden crust of breadcrumbs. The dish's uniqueness lies in its rich flavor due to marination, which gives the meat juiciness and a slight spiciness. These nuggets are perfect for a cozy family dinner or a light snack. They can be served with a berry sauce made from gooseberries, adding a refreshing tartness that enhances the dish's flavor. Rinse the chicken breast (fillet) under running water, pat dry with a paper towel to remove moisture, and cut the breast into portion-sized pieces 4 cm wide, about 1-1.5 cm thick, and approximately 7 cm long.
- Chicken fillet: 500 g

Salt and pepper the pieces of chicken.
- Salt: pinch
- Ground black pepper: pinch

In a deep bowl, mix mayonnaise and garlic pressed through a garlic press.
- Mayonnaise: 5 tablespoon
- Garlic: 2 cloves

Dip the fillet pieces in the prepared mayonnaise sauce, mix, and let marinate for 30-40 minutes.

We coat pieces of marinated chicken in ground breadcrumbs without separating it from the sauce.

Next, place our future nuggets in a preheated pan with refined oil, frying them on medium heat for 5-7 minutes on each side.
- Vegetable oil: 150 ml

Place the cooked nuggets on a plate lined with a napkin or parchment to avoid them being greasy.

P.S. To make the nuggets even tastier, I recommend preparing a berry sauce to complement the flavor of the dish and make it brighter. Gooseberry sauce (can be replaced with yost or a mix of red, white, and black currants): 100 g berries, 30 g garlic, 50 g dill, parsley and mint greens, a pinch of salt to taste, half a teaspoon of sugar. Chop the greens, berries and garlic and blend or grind them together; add sugar and salt — serve with chicken.
