Green beans in pumpkin sauce is a vibrant and nutritious dish inspired by Brazilian cuisine. The combination of fresh beans, tender mushrooms, and sweet carrots creates a harmony of flavors and textures, while the pumpkin sauce adds creaminess and richness to the dish. Pumpkin and potatoes whipped with aromatic herbs turn into a velvety dressing that perfectly complements the lightness of the vegetables. Sautéed garlic adds zest, while oregano and parsley provide a refreshing note. This dish not only delights the palate but also nourishes the body with beneficial nutrients. It is perfect as a standalone dish or as a side to meat and fish. The simplicity of preparation makes it an excellent choice for family dinners.
