Boil the potatoes in their skins for about 20 minutes, slightly undercooking. Peel and grate them on a fine grater.

Add a pinch of salt and sifted flour. Knead the dough. Roll pieces of dough into sausages and cut them into small pieces. Make indentations on each piece with a fork.

If necessary, add a pinch of sugar or balsamic.
