Clean and wash the vegetables. Cut the carrot into strips 2-3 mm thick and 3-5 cm long. Chop the sweet pepper finely, and cut the chicken into cubes with a side of 1 cm. Mince the peeled onion and crush the garlic.

In a large pot with heated vegetable oil, add onion and garlic, and sauté until golden. Then add the remaining vegetables, chopped green onion, and chicken, and fry until the meat starts to brown. After that, add soy sauce and ginger, mix, pour in 3/4 cup of water, cover with a lid, and simmer, stirring occasionally, until the vegetables are soft and the sauce thickens. Finally, add salt.

Add the noodles to salted boiling water, cook for 2-3 minutes, drain in a colander, rinse and let drain. Then transfer the noodles to a pot with vegetables and meat, mix well and simmer on low heat for another 3-4 minutes. Serve immediately.
