Wash the meat. Poke it in several places with a knife (this helps the meat absorb the marinade better), but do not cut it.
- Turkey fillet: 1.5 kg

Mix honey, mustard, vinegar, oil, and salt in a bowl.
- Honey: 150 g
- Grainy mustard: 100 g
- Vinegar: 2 tablespoons
- Vegetable oil: 2 tablespoons
- Salt: pinch

Place the meat in a bowl - it should be almost completely covered with marinade. Leave for at least 2 hours, preferably overnight (it's better to turn the meat several times - this way it absorbs the marinade better).
- Turkey fillet: 1.5 kg

Place the meat in a dish, pour the marinade into a bowl, leaving a little at the bottom of the dish. Cover the dish with foil - this will make the meat juicier.

Preheat the oven to 250 degrees - roast the turkey at this temperature for 10 minutes. Then reduce the temperature to 150-170 degrees. Roast for another 50 minutes. Then open the foil, lightly baste the turkey with marinade from the bowl, and leave it for another 15 minutes.

The meat is ready. Slice it, drizzle with marinade from the dish or bowl, and serve.
