Meat baked accordion-style with cheese and tomatoes

Both pork and beef are suitable for this recipe.

Choose a flat (rectangular), dense piece of meat (like for brawn). Make cross cuts on the meat.

Mix lemon juice, soy sauce, mustard, and oil, and coat the meat on all sides and in the cuts, seasoning with salt and pepper to taste. Let the meat marinate for 10-12 hours.
- Lemon juice: 1 tablespoon
- Soy sauce: 3 tablespoons
- Mustard: 1 tablespoon
- Sunflower oil: 2 tablespoons
- Meat: 1 kg

Cut the cheese into slices, the tomatoes into rings, and chop the garlic in a blender or press it through a garlic press. Rub the meat completely with garlic, placing cheese and tomatoes in each cut. Optionally, you can add mushrooms around the piece and in the cuts. Wrap the meat in foil, place it on a baking sheet, and put it in a preheated oven at 180-200°C. Bake until done for 50-60 minutes.
- Cheese: 200 g
- Tomatoes: 3 pieces
- Garlic: 3 cloves
