Chicken breast stuffed with pineapples and cheese is a delightful dish of European cuisine that combines the tenderness of chicken meat with the exotic sweetness of pineapple and the rich creaminess of cheese. This combination makes the dish's flavor simultaneously fresh, sweetish, and rich. This recipe originated as part of a gastronomic experiment that merges traditional chicken cooking techniques with tropical notes. The stuffed breast is fried in breadcrumbs until it has a crispy golden crust, revealing a juicy and aromatic filling inside. It is perfect for both everyday dinners and festive tables, harmonizing well with light vegetable salads and white wine.

1
Prepare the chicken breast, wash it, and cut a 'pocket' in the breast, trying not to cut all the way through. Season the finished 'pocket' with salt and pepper inside and out.
- Chicken breast: 4 pieces
- Salt: to taste
- Ground black pepper: to taste
2
Press the garlic and mix it with mayonnaise. Grease the inside of the breast 'pocket' with the garlic-mayonnaise mixture.
- Garlic: 1 clove
- Mayonnaise: 1 tablespoon
3
For the filling: drain the liquid from the pineapples and cut them into cubes. Grate the cheese on a coarse grater. Mix the pineapples with the cheese and add a little mayonnaise to make the mixture sticky. Fill the chicken 'pocket' with the cheese-pineapple mixture and secure it with toothpicks.
- Canned pineapple: 100 g
- Hard cheese: 100 g
- Mayonnaise: 1 tablespoon

In a bowl, mix the egg with a fork and add salt. In a separate plate, pour breadcrumbs. Dip the chicken breast in the egg, then coat it in the breadcrumbs.
- Chicken egg: 1 piece
- Salt: to taste
- Breadcrumbs: 2 tablespoons
5
Fry the chicken breast in a pan with heated vegetable oil on both sides until golden brown, then reduce the heat and continue frying until cooked through.
