Mushroom solyanka is a rich, aromatic soup that combines the best flavors of forest mushrooms, tender potatoes, and creamy sour cream. Its roots trace back to European cuisine where mushrooms have always been a valued ingredient due to their rich taste and nutritional value. This soup fills the home with a cozy forest aroma, and its thick consistency makes it an excellent choice for a hearty lunch or dinner. The taste of solyanka is delicate, with a subtle tang from the sour cream, a light nutty hint from the mushrooms, and pleasant softness from the potatoes. The sour cream adds richness to the dish while spices enhance its depth. It’s the perfect dish for those who love simple yet flavorful homemade soups. Solyanka warms you up well and provides a sense of comfort, especially in cool weather.

1
We clean, wash, and cut the mushrooms. We cut the caps into cubes like potatoes and the stems into rounds, but this is not mandatory. You can cut them however you like.
- Fresh mushrooms: 1.5 kg
2
We place the mushrooms in a pot and cover them with water just enough to slightly submerge them, then put it on the stove. Start with high heat, then let it simmer. As time goes on, the mushrooms will cook and release moisture, while the water will evaporate slightly, maintaining a balance. If the water starts to evaporate too much, we add more.
3
While the mushrooms are bubbling, we clean, finely chop, and place the onion in the pot. We constantly stir the mushrooms to prevent them from burning!
- Onion: 1 head
4
After the onion, add sunflower oil and stir.
- Vegetable oil: 1 tablespoon
5
Cut into small cubes and add to the pot as they cook, stirring.
- Potato: 300 g
6
After the potatoes are placed in the pot, add butter and let it simmer for another 10-15 minutes, stirring.
- Butter: 1 tablespoon
7
Add salt and pepper, then add 20% sour cream, bring to a boil over low heat, keep for 5-7 minutes while stirring, turn off the heat, cover with a lid and let it rest for 10-15 minutes.
- Salt: to taste
- Ground black pepper: to taste
- Sour cream 20%: 100 g
