Noodles in Ukrainian is a soulful, rich dish rooted in the traditions of Ukrainian cuisine. It combines tender stewed meat, aromatic fried potatoes, and soft flour rolls soaked in garlic and herbs that become incredibly juicy by absorbing the juices of all ingredients. It is prepared with love and unhurriedness, allowing each component to fully unfold. The taste of the noodles is rich, with a slight tang from the kefir in the dough, pleasant garlicky spiciness, and a warm, homely aroma. The dish is perfect for cozy family lunches or dinners when you want to enjoy a rich flavor and the atmosphere of home.

First everything as usual. I sautéed onions with carrots. Added meat cut not too small, not too large, salt, and pepper. Sautéed it lightly, poured in water and simmered until done, remembering to add water when it evaporated... While the meat is simmering, let's prepare the noodles.
- Onion: 1 head
- Carrot: 1 piece
- Beef: 500 g
- Salt: to taste
- Ground black pepper: to taste

Pour kefir into a bowl, add baking soda and salt, and mix. Gradually add flour and stir. Add enough flour to make a soft dough. Set the dough aside.
- Kefir: 0.5 glass
- Soda: 0.3 teaspoon

The potatoes need to be fried separately. I had small potatoes, I cut them into 4 pieces, smaller is not needed. And I didn't fry them until they were done.
- Potato: 1 kg

The meat is ready, well stewed. We add fried potatoes (raw is also fine, but fried is tastier), add water so it doesn't completely cover the potatoes (basically, it's up to you — if you want it thinner, add more water, if thicker — add less water).

While the potatoes are boiling, we prepare the noodles. For this, we roll out the dough thinly, brush it with vegetable oil (I used the oil I fried the potatoes in), squeeze garlic and spread it over the dough surface, and sprinkle with dill. We roll it into a log and cut it into pieces about 1.5 cm wide.
- Garlic: 3 cloves
- Parsley: 0.5 bunch
- Wheat flour: to taste

When the potatoes are ready, we place the noodles on top (if there's little water, add some, taste it, you might need to add salt). Cover with a lid and simmer on the lowest heat for about 15 minutes. The aroma will be so inviting that everyone will rush to the kitchen to see what you're cooking!
