Mix the ingredients for the sauce in a small saucepan.
- Red onion: 1 piece
- Worcestershire sauce: 50 ml
- Ketchup: 150 g
- Red wine vinegar: 50 ml
- TABASCO®: to taste
- Brown sugar: 50 g
- Dry mustard: 0.5 tablespoon

Bring to a boil over medium heat, let it simmer slowly for about 15 minutes.

Remove the pot from the heat, season the sauce with pepper and salt.

Using a teaspoon, carefully separate the membrane from the ribs (the membrane on the hollow side of the ribs). By lifting one corner of the membrane with a spoon, you can then easily remove the entire membrane by hand.

Turn on the Big Green Egg grill, place the stand in it, and set the temperature to 120 degrees.

When the grill heats up to the specified temperature, slightly lift the stand and spread the soaked Cherry Wood Chips over the hot coals.

Place a rectangular tray on the stand, pour water into it, and place a stainless steel grill rack in the grill.

Insert the V-shaped rack, place the ribs on it, and brush them with barbecue sauce. Close the grill lid.
